Lead the opening of our newly renovated and renamed, Tides Kitchen and Bar!
Reporting to the General Manager, we are seeking an experienced Head Chef to join our team at Angourie Resort in this full-time role. You’ll be at the helm reopening our revamped and renamed, Tides Kitchen and Bar. You'll use your energy, experience and creativity to help build the identity of our restaurant through menu creation and by leading and developing your Kitchen team.
You’ll work closely with our General Manager and Restaurant Manager to ensure our guests have a great dining experience. You will also form part of the Resorts head of department structure to collaborate, communicate and lead consistency across all areas.
Serving modern Australian cuisine with fresh local seafood you’ll curate a la carte delights for Tides Kitchen and Bar, our Pool Bar and Room Service menus. You'll also play a key role in the many functions and events that take place at our Resort.
Staff accommodation (share house) available at a subsidised cost for the right candidate.
What you will do:
* Lead a kitchen team with clarity, direction, enthusiasm and a hands on approach
* Ensure all aspects of food preparation, cooking and presenting of dishes according to company guidelines and customer preferences
* Effective management of the department roster
* Effective management of waste, portion sizing and menu preference offerings
* Ordering of food products to ensuring consistent menu availability.
* Cost analysis and menu planning to ensure the resort food cost & KPI's are achieved
* Look to source local and cook fresh
* Oversee and manage the food offering for any events and functions
* Liaise with food service and management regarding customers order and general service of kitchen operations
* Maintain a safe and hygienic working environment, to include proper storage of food, equipment, utensils and implements
* Ensure, daily temperature checks of fridges, freezers, storage areas, deliveries and recording assessment where necessary
What you will bring:
* A formal qualification in commercial cookery is essential
* Previous experience in a Sous or Head position in a restaurant, resort or bistro
* Effective verbal communication skills
* Ability and passion to build the skills and knowledge of our team through great training, coaching and mentoring
* Inventory management experience (stock control, ordering)
* Experience managing financial budgets
* Knowledge of contemporary food and service trends and culinary styles
* Flexibility to work rotating shifts, including weekends and public holidays
* Knowledge and understanding of safe working procedures
