This is a hands-on role requiring regular kitchen oversight and presence in all food outlets.The Assistant Kitchen Manager will enforce all Australia Zoo policies and procedures and will oversee the preparation, storage and service of all food products from all food outlets. This will include daily venue walkthroughs and quality checks reporting back to the food services manager.The successful candidate will have a demonstrated understanding for hospitality and the capacity to encourage a team to strive to achieve continual development and reach goals. Within this role you will be responsible for ensuring the functional operation of the Kitchen Team to the highest standards.Duties Include:Implement and maintain food safety standards in accordance with local health regulations.Conduct regular inspections and audits to ensure adherence to food safety protocols.Train kitchen staff on proper food handling and sanitation procedures.Ensure all food safety documentation is completed.Enforce safety policies and procedures to create a safe working environment.Conduct safety training sessions for kitchen staff and monitor compliance.Ensure allergen matrixes are up to date, accessible and in use and that all staff are trained in how to handle dietary related questions.Oversee the preparation and presentation of all food items to meet quality standards.Monitor inventory levels and ensure freshness and quality of ingredients.Collaborate with the Food Services Manager to develop and refine menu items for taste and presentation.Prepare and serve functional foods where required.Maintain cleanliness and organisation of the kitchens and storage areas.Develop and implement cleaning schedules and protocols.Monitor dishwashing and sanitation processes to ensure effectiveness.Assist in managing food costs by controlling waste, portion sizes, and inventory.Foster a positive and collaborative work environment among kitchen staff.Lead by example and provide guidance and support to team members.Assist in service where required to ensure food is served hot, fresh and on demand.Management level experience in a fast-paced food service restaurant.In-depth knowledge of food safety.Experience in structured training systems.Excellent time management skills to handle high pressure situations.Full Availability, including weekends, public holidays and school holidays.Hold current Driver’s Licence (Manual is preferred).
