Bistra is an Australian bistro serving quality food and wine, located on Elgin Street in Carlton. The restaurant, which seats 60 pax, offers smart casual, à la carte dining and features an extensive wine list. Bistra's cuisine can largely be defined as Australian, drawing its influence predominantly from British, French and Italian cooking and technique. Head chef Alex Nishizawa (previously Attica, Bar Liberty) leads an exciting team of young and ambitious chefs. Bistra's three owners, Henry Crawford, Alexei Taheny-Macfarlane and Joseph Ho, all bring a set of diverse experiences within the wine and hospitality industries, including owning and operating other venues. About the opportunity: The role offers dynamic work in a newly built kitchen, alongside like-minded and ambitious chefs. Bistra is open five days, offering dinner Wednesday to Saturday; and lunch Friday to Sunday. Rosters will offer a mix of both lunch and dinner services. As a CdP at Bistra, you will be responsible for maintaining a section in relation to: Ensuring a high level of consistency and execution across prep and service Preparing meat, fish & poultry Overseeing food hygiene standards Monitoring stock on hand, portioning, and waste management Overseeing the management of kitchen food safety standards Working closely with the head chef The ideal candidate must have: The knowledge and ability to run a section A love of food and high quality ingredients Minimum three years of relevant experience A high level of attention to detail Adaptability to change and willingness to embrace new ideas and systems Strong verbal and written communication skills Personal traits of kindness & empathy Ambition to grow within the role The role has an immediate start date.
