About The ClientLaffa Bar Charcoal Grill in Caulfield, Victoria is an authentic Mediterranean charcoal grill restaurant that serves up authentic flavours.They are currently looking for an experienced Chef to join their kitchen team.The RoleThis is a full time role with an annual salary of $80,000 plus superannuation.The ResponsibilitiesYour tasks at the restaurant will consist of:Plan, direct, and supervise the food preparation and cooking activitiesDetermine how food should be presented, and create decorative food displaysDetermine production schedules & staff requirements necessary to ensure delivery of servicesEstimate amounts and costs of required supplies, such as food and ingredientsInspect supplies, equipment, and work areas to ensure conformance to established standardsInstruct cooks and other workers in the preparation, cooking, garnishing & presentation of foodMonitor sanitation practices to ensure that employees follow standards and regulationsOrder or requisition food and other supplies needed to ensure efficient operationAnalyse recipes to assign prices to menu items, based on food, labour, and overhead costsArrange for equipment purchases and repairsMeet with sales representatives in order to negotiate prices and order suppliesPrepared and cook food of all types, either on a regular basis or for special guests or functionsSupervise and coordinate activities of cooks and workers engaged in food preparationCollaborate with other personnel to plan and develop recipes and menus, taking into account such factors as seasonal availability of ingredients and the likely number of customersCheck the quality of raw and cooked food products to ensure that standards are metCheck the quantity and quality of received productsDemonstrate new cooking techniques and equipment to staffRecord production and operational data on specified formsMaintaining safety and hygiene standards in the kitchen at all timesThe Requirements:To be considered for the position you must meet the following requirements:Relevant qualifications in cookery or hospitalityMinimum 2 years of experience as a Chef in a similar roleAt least 2 years demonstrated knowledge and experience in a commercial kitchenAt least 2 years' experience in planning specialised menus for individuals with various dietary restrictionsAt least 2 years cooking over open charcoal fireAt least 2 years demonstrated knowledge and experience in menu planning and creationStrong understanding of food safety regulations and ability to enforce strict hygiene standardsKnowledge of allergen management and protocols to prevent cross-contamination.Experience in training and managing kitchen staff, ensuring consistency and quality in meal preparationAbility to lead a team and foster a positive and inclusive work environmentAbility to handle multiple tasks and prioritize effectivelyAbility to innovate and create diverse menus despite limitations in ingredients
