Required skills and experience: AQF Certificate III including at least 2 years of on-the-job training, or AQF Certificate IV plus 2 years of work experience in a restaurant, or 3 years of work experience as a Cook in a restaurant in lieu of qualifications Your responsibilities include the following: Execute diverse cooking techniques including grilling, frying, poaching, and cold preparation methods Prepare and oversee production of house-made components including sauces, relishes, and preserves Maintain specialised breakfast preparation standards, particularly for egg dishes and breakfast pastries Handle and prepare fresh seafood including oysters, SA King George Whiting, and salmon Implement seafood safety protocols and temperature controls Ensure strict compliance with dietary modifications including vegetarian, vegan, gluten-free, and dairy-free options Maintain separate preparation areas to prevent cross-contamination Monitor and regulate temperatures of cooking equipment and storage facilities Maintain temperature logs and food safety records Monitor and control food costs and wastage Prepare accurate food orders and manage stock levels Train and develop kitchen staff in menu execution and quality standards Maintain consistent quality standards across all menu items from preparation through to plating Manage cold kitchen operations including salad preparation and garnish production Ensure proper storage and handling of fresh produce and proteins Implement and monitor food safety and hygiene protocols
