About the Role
We are seeking a driven and hands-on Executive Chef with creativity, and culinary flare.
The individual must be inspiring to others and equally inspired to create unique experiences.
The successful candidate will motivate and groom a team in a high pressure, high turnover, hotel environment.
We are looking for a natural born leader to embrace and activate the wider culinary, including front of house, teams through a strong training culture, and who has the ability to recognize and engage high-level clientele, including entertainment and media clients.
Responsibilities
* Run and organize a large team within budget guidelines.
* Drive the overall Workplace Health & Safety, and the Food Safety Supervisor compliance and standards of each kitchen in the hotel.
* Oversight of the day-to-day food operations of the business, ensuring the highest standard of food (harmoniously paired with beverage) is coupled with exceptional service.
* Collaboration with the Culinary Director, Head Chef, Food and Beverage Director, Group Wine Director and General Manager to meet the food operational objectives.
* Build and motivate a team of like-minded professionals, with a diverse range of skills and backgrounds towards a unified goal of excellence.
* Achieve high level financial acumen, experience in hitting wage, COGS and revenue targets to maximize profitability.
Requirements
* Minimum 6 years' experience in operating a large, high-end, kitchen.
* Able to effectively run and organise a large kitchen brigade within the budget guidelines.
* Flexible with workdays and hours, being a 24 hour, 7 days a week operation.
* Excellent communicator, with the ability to delegate tasks and follow up.
* Project a professional image at all times through personal presentation and high-level interpersonal skills.
* Sound knowledge & thorough understanding of compliance, kitchen safety, and overall legislation.
* Encyclopedic knowledge of food & cooking techniques.
* Passionate customer service advocate.
* Strong background in staff training and mentoring.
