Benefits Salary of $73000 - $80000 plus super Task & Responsibilities As the third in charge, the Chef de Partie will be pivotal in maintaining the operational flow of the kitchen, & working alongside the Head Chef & Sous Chef with the following responsibilities: Menu Planning and Development: Assist in creating menus that meet customer expectations, incorporating dietary needs, seasonal ingredients, and food trends. Ensure the menu aligns with cost and profit goals while maintaining quality. Estimating Food and Labour Costs : Help estimate food and labour costs based on menu items and portion sizes. Work with the kitchen management team to monitor budgets and ensure profitability without sacrificing quality. Ordering and Managing Food Supplies : Oversee food orders and stock management to maintain optimal inventory. Build strong relationships with suppliers for timely deliveries and ensure proper food storage to minimise waste. Monitoring Food Quality : Ensure dishes meet restaurant standards during preparation. Perform quality checks on ingredients and final dishes to guarantee consistency, flavour, texture, and presentation. Collaboration and Communication : Communicate effectively with Managers, Dietitians, kitchen staff, and waiting staff to address concerns and ensure smooth operations, especially during busy service times. Demonstrating Cooking Techniques : Guide junior staff in cooking techniques, ensuring adherence to safety standards. Provide mentorship and lead by example. Food Preparation and Cooking : Prepare and cook dishes to high standards, ensuring consistency and timely execution. Ensuring Hygiene and Safety Compliance : Enforce food safety and hygiene regulations, monitor cleanliness, and ensure staff adherence to protocols. Staff Selection and Training : Assist with recruiting and training staff, fostering teamwork. Freezing and Preserving Foods: Supervise food preservation techniques to ensure quality and safety. Day-to-Day Running of the Kitchen : Manages the daily operations of the kitchen, including overseeing food preparation, coordinating with other departments, and ensuring a smooth flow of service. Qualification & Experience Formal qualifications preferred with previous Chef de Partie experience in the Hospitality and Tourism Industry with at least 1 year of relevant work experience on a full-time basis within the last 5 years. AQF Associate Degree, Advanced Diploma or Diploma. A minimum of three years of relevant experience can replace the formal qualifications mentioned above. In certain cases, relevant experience and/or practical on-the-job training may be necessary alongside the formal qualifications. The nominee must combine culinary expertise, kitchen management, cost control, and leadership to ensure excellent service and smooth kitchen operations. Ability to communicate effectively and motivate the team and liaise and collaborate with other departments and management personnel. Ability to lead by example - displaying a common sense, practical, hardworking, hands-on, and ethical attitude.
