ABOUT THE ROLE: RELOCATION ROLE - GOLD COAST JRM is currently seeking an exceptional Head Chef/Senior Sous Chef specialising in Cantonese Cuisine to take the helm of one of the Gold Coast most esteemed fine dining restaurants.
The restaurant is widely acclaimed as the leading brand, reflecting the rich cultural heritage of Cantonese cuisine with a blend of traditional culinary techniques, authentic flavors, and modern refinement.
The venue trades for dinner only and offers both a la carte and banquet style menus.
The team is made up of highly dedicated and career driven professionals that continue to deliver the pinnacle of fine dining experiences.
In addition to the restaurant you will contribute your expertise in the field and oversee the authentic production of Cantonese cuisine offered in the venues other outlets including In Room Dining, Functions and Events.
As Head Chef, you will: Oversee all aspects of menu development, food production, and quality for the restaurant, ensuring it remains a benchmark for Cantonese dining in Australia.
Partner with senior management to create innovative, seasonal menus that celebrate authentic Cantonese techniques while incorporating modern trends.
Maintain consistency and excellence across all dishes, from à la carte to banquet offerings.
Lead and mentor the kitchen brigade, fostering a culture of creativity, respect, and teamwork.
Drive operational efficiency, including food cost management, stock control, and supplier relationships.
Collaborate with the management team to enhance the guest experience and elevate the restaurant's reputation.
To excel in this role, you will have: Extensive experience as a senior chef specialising in Cantonese cuisine, preferably within luxury hospitality or premier dining environments.
Expertise in traditional Cantonese culinary techniques and their modern interpretation.
A proven track record of managing high-performing teams and achieving operational excellence.
Strong understanding of food cost management, menu development, and kitchen operations.
Bilingual fluency in Cantonese and English (spoken and written) is highly desirable.
International experience and culinary education are advantageous.
