At voco Gosford, modern elegance meets warm hospitality in the heart of the Central Coast. With six exciting hospitality venues; including a modern Australian pub, a rooftop bar, and a signature restaurant, and two levels of conference and event space overlooking the stunning Brisbane Waters, we’ll cater to both business and leisure travellers, as well as provide a swanky new destination for locals to meet.
As Executive Sous Chef, you will collaborate closely with our Executive Chef to oversee up to six upscale Food & Beverage outlets within our precinct. Behind the scenes, you’ll uphold quality, maintain high standards and ensure the kitchen operates seamlessly.

A little taste of your day-to-day
Every day is different, but you’ll mostly be:
* Making every single meal a feast for the eyes and treat for the tastebuds
* Assisting Executive Chef in controlling food cost through storeroom requisition systems, product storage requirements, standardisation recipes and waste control procedures
* Supporting Executive Chef in preparing operational reports, analysing progress and trends and making appropriate recommendations.
* Working with the Executive Chef on analysing sales and inventory to maximise opportunities
* Helping the Executive Chef and Operations Team in managing payroll and controllable profit within established guidelines. Meeting payroll budget expectations by being strategic with coverage, on-call shifts, etc.
* Supporting in scheduling appropriate staff levels in accordance with budget and business forecast.
* Interviewing, hiring, evaluating, rewarding, and progressively coaching kitchen personnel as appropriate.
* Encouraging and addressing guest feedback
* Developing culinary training programs for food production employees and serving as a culinary resource to promote quality food services. Ensuring Safety training(s) completed with all staff upon hire.
* Training kitchen personnel in safe operating procedures of all equipment, utensils, and machinery, as well as food production principles and practices.
* Directing and coordinating the work of production and dish room staff as necessary.
* Maintaining communications with Food and Catering Operations teams through weekly meetings and daily conversations to ensure proper menu productions, standards, quality and amount of staff.
* Maintaining a close relationship with the client’s staff to ensure a positive working relationship.
* Managing employees in accordance with State and Federal labour laws.
* Maintaining a clean, safe and organised work environment.
* Upholding and demonstrating a complete understanding of company policies and procedures.
* Helping implement systems and processes that help make tasks efficient and strengthen the financial performance of the unit.
* Supporting precedent to achieve Sales, Per Cap & Controllable Budget.
* Directing daily kitchen activities as well as coaching and developing a team capable of catering to more than 500 people
* Helping our Food and Beverage Director plan events
What we need from you
* Degree or certificate in culinary arts preferred
* 3-5 years’ experience as a Sous chef or similar experience in a high volume outlet.
* Must speak local language(s)
* Knowledge of HACCP
* At least one year in a supervisory capacity, or equivalent combination of education and culinary/kitchen operations experience
* Computer knowledge and skill level for basic office functions.
* Ability to work varied hours/days, including nights, weekends and holidays, as needed.
