Our recent $1 million clubhouse renovation makes our facility a top destination for both golfers and diners alike.
As part of our team, you will lead and support the kitchen brigade, ensuring the highest standards of food quality, consistency, and presentation. You'll be responsible for creating exceptional seasonal menus, managing kitchen operations, and working closely with the head chef to maintain smooth daily operations.
We're looking for a candidate with strong leadership skills and an in-depth knowledge of kitchen management. You should have experience in a fast-paced, high-volume environment, with a passion for delivering exceptional dishes. The ability to train and motivate a team, as well as maintain a positive and hardworking kitchen culture, is essential.
Benefits $75000-$80000 Salary plus Super.
Task & Responsibilities Planning Menus : Collaborates with the Head Chef and key kitchen staff to plan and create seasonal menus, considering customer preferences, dietary requirements, and ingredient availability. Estimating Food & Labour Costs : Manages kitchen budgets by estimating food and labour costs, ensuring kitchen operations remain within financial constraints while maintaining high standards. Ordering Kitchen Supplies : Ensures the kitchen is adequately stocked with quality ingredients, maintaining strong relationships with suppliers and ordering supplies as needed to meet menu demands. Monitoring the Quality of Dishes : Oversees the preparation and presentation of dishes to ensure they meet established quality standards, ensuring consistency and excellence at every stage. Discussing Food Preparation Issues : Collaborates with kitchen staff, front-of-house teams, and management to address and resolve food preparation or operational challenges in a timely manner. Demonstrating Techniques and Advising on Cooking Procedures : Provides guidance and hands-on support in cooking techniques, advising kitchen staff to ensure consistency in food preparation and presentation. Explaining & Enforcing Hygiene Regulations : Maintains strict adherence to food safety and hygiene regulations, ensuring kitchen practices comply with all health and safety standards. Selecting & Training Staff : Assists with staffing decisions, including recruiting, training, mentoring, and evaluating kitchen personnel to ensure the team performs at its best. Freezing and Preserving Foods : Implements proper food preservation practices, ensuring ingredients are frozen or stored and labelled correctly to minimise waste and maintain quality. Day-to-Day Running of the Kitchen : Manages the daily operations of the kitchen, including overseeing food preparation, coordinating with other departments, and ensuring a smooth flow of service. Qualification & Experience Formal qualifications preferred with previous Sous Chef experience in the Hospitality and Tourism Industry with at least 1 year of relevant work experience on a full-time basis within the last 5 years. AQF Associate Degree, Advanced Diploma or Diploma. A minimum of three years of relevant experience can replace the formal qualifications mentioned above. In certain cases, relevant experience and/or practical on-the-job training may be necessary alongside the formal qualifications. The nominee must combine culinary expertise, kitchen management, cost control, and leadership to ensure excellent service and smooth kitchen operations. Ability to communicate effectively and motivate the team and liaise and collaborate with other departments and management personnel. Ability to lead by example - displaying a common sense, practical, hardworking, hands-on, and ethical attitude.
