* Extensive A la carte experience, in a high cover environment & ability to execute a Modern Australian/ Mediterranean menu, with a love for seafood/ proteins.
* Strong abilities in training, mentoring and developing teams

* Overall knowledge of operational & financial knowledge
* The desire to grow and develop your career
