The Rainbow Hotel in Fitzroy and the Woodlands Hotel in Coburg are both looking for sous chefs to join their respective teams. The venues cater to all types of patrons from families to tradies, and more. This could be someone looking to take the next step or a person who is currently a sous chef and looking for a new opportunity.A full-time position is available at both venues for a creative Chef with a passion for fine cuisine to join our vibrant team.The Role:To be the second in command in the running of the kitchen. Helping to organise the activities within the kitchen, making sure food and wage costs are within acceptable parameters whilst simultaneously ensuring the quality of food leaving the kitchen is of a high standard and assisting the head chef in these duties.Duties will include:Support the head chef in the daily running of the kitchen and undertake his responsibilities in case of absence.Lead service periods, ensuring all food leaves the kitchen with good quality cooking and good presentation.Control ordering, ensuring there is enough stock in the kitchen for staff to prepare during prep and service whilst simultaneously minimising food costs.Menu construction in collaboration with the head chef.Review the menu periodically and propose new dishes in accordance with seasonal products.Calculate costs involved in new dishes and cost changes in existing menu.Ensure junior staff perform right cooking techniques, portioning and presentation of dishes.Monitor compliance of hygiene and OH&S regulations within the kitchen environment.
