Offer pricing recommendations based on food costs, profit margins, and customer value insights.Menu Innovation: Develop and refresh menus that capture the unique identity of each venue, using seasonal ingredients and the latest culinary trends to create engaging, memorable food experiences.Market Research: Conduct thorough research to stay on top of culinary trends, customer preferences, and industry standards. Create standardised recipe cards and guide production to ensure quality across all venues.Operational Excellence: Oversee food cost management, minimise waste, and maintain supplier relationships to ensure quality ingredients. Adaptable and resilient, you thrive in a fast-paced environment, inspiring team morale through mentorship and collaboration.To be successful in this role, you will need:Leadership in High-Volume Production: Demonstrated experience managing large-scale kitchen operations, ensuring efficient bulk production across multiple high-demand venues.Innovative Menu Development: Strong ability to design and execute creative, high-quality menus tailored to bulk production while maintaining culinary excellence.Cross-Venue Collaboration: Skilled in coordinating across various venues to align production with demand and operational goals.Operational Efficiency: Expertise in optimising kitchen processes, managing resources, and ensuring seamless delivery in a fast-paced, high-volume environment.Quality Assurance and Standards: Proven commitment to upholding exceptional food quality and presentation standards in a large-scale setting.You will also have:Certificate III in Commercial Cookery (Essential)Current Food Safety Supervisor Certificate (Essential) and a deep understanding of health and safety regulations.Current valid Drivers Licence (Essential)Restricted Drivers Authority or ability to obtain (Valid Drivers licence and at least 3 years clean driving record) (Essential)Minimum 5 years' experience in an Executive or Head Chef position in a high-volume, diverse culinary environment.Proven experience in large bakery, wholesale or franchise environment would be beneficial.Demonstrated proficiency in IT systems, Microsoft Word, Excel or equivalent for kitchen management.About UsPart of the Whitsundays and in the heart of the Great Barrier Reef, Hamilton Island is one of Australia's most spectacular and sought-after holiday destinations.
