About the Role:
* Assist the Head Chef in managing kitchen operations, ensuring food and labour costs remain within acceptable parameters while maintaining high-quality dishes.
Main Responsibilities:
* Support the Head Chef during their absence, taking charge of daily kitchen activities.
* Lead service periods, guaranteeing excellent presentation and cooking standards.
* Oversee ordering, balancing stock levels to minimize waste and optimize menu options.
* Collaborate with the Head Chef on menu development, incorporating seasonal products.
* Analyze costs associated with new dishes and cost changes to existing menu items.
* Mentor junior staff on proper cooking techniques, portioning, and presentation.
* Ensure compliance with hygiene and OH&S regulations, delegating cleaning tasks as necessary.
Requirements:
* Punctuality, reliability, and strong work ethic.
* Certificate IV in Commercial Cookery.
* A minimum of 3 years of experience in professional kitchens.
* No less than 2 years of experience in fine dining environments.
* Excellent organizational skills and ability to produce high-quality dishes under pressure.
* Good English communication skills.
* Strong time management and problem-solving abilities.
