We are excited to announce an opportunity for a Sous Chef to join our dedicated team at The Westin and Four Points by Sheraton Brisbane. Role Overview: The Sous Chef will be required to oversee the smooth running of specific sections of the kitchen without supervision. Supporting the senior chefs with the daily management and food preparation, ensuring maximum quality and profitability. This includes supervision, training, development and coordination of the kitchen brigade as well as effective communication and liaison with other departments. The Sous Chef will conduct their duties in a courteous, safe and efficient manner, in accordance with the hotel’s policies and procedures, ensuring that a high level of service is maintained. Key Responsibilities: · Plan and develop menus for the hotel considering factors such as product availability, service cost, marketing conditions, number to be served, etc. Establishes and maintains appropriate food portions with respect to the hotel's pricing policy · Costing of menus and effective management of food cost · Prepare and post employee work schedules to reflect operating forecasts and to keep within budgeted figures., including managing annual and long service leave · Ensuring that food stock levels within the kitchen and pantry areas are of sufficient quantity and quality in relevance to the hotel occupancy and function forecasts · Inspect method of food preparation and cooking at all meal periods · Assist in maintaining and controlling all venue expenses, ensuring they are within budget guidelines and business levels, eg. wage costs, overtime, supplies · Ensure 100% compliance with all local Legislation · Responsible for the day to day management of Associates working in the Department About You: Demonstrated experience in a Sous Chef position or a similar role. Demonstrated experience in people management/working within a team. In-depth knowledge of best practices in the Accommodation and Food & Beverage industry. Excellent communication abilities. Skill in developing and maintaining strong relationships with suppliers and internal teams. Outstanding attention to detail and strong organisational capabilities. Capacity to work independently as well as collaboratively within a dynamic team environment. Strong analytical and problem-solving skills, with a proactive mindset toward culinary challenges.
