We are currently seeking applications for a newly created role, Roving Chef Manager, which will operate across all our Residential Care facilities throughout New South Wales and the ACT. This role, reporting directly into the General Manager Hospitality Services, is designed to support our onsite hospitality teams by driving operational efficiency and fostering strong stakeholder relationships. The primary focus of this role is to ensure leadership coverage when our Chef Managers and Head Chefs are on leave to ensure our residents enjoy an exceptional hospitality experience.
This is a leadership role that includes team supervision, documentation, training and development as well as collaboration with other teams to ensure a customer service culture is maintained and high-quality care is delivered to residents of RSL Life Care (RSLLC).
Please note this role requires frequent travel intrastate based at a range of sites for short periods of time: all travel and subsistence costs will be covered over and above standard remuneration. A bit about what your new role looks like: Maintain and oversee a high-quality food service, with high levels of food presentation, which consistently meets expectations of residents and their visitors. Lead day-to-day management of all kitchen operations. Maintain ordering systems and supervise ordering for all sections in the main kitchen including textured modified meals and special diet sections. Maintaining food costs within budgetary guidelines. Provide day-to-day supervision of employees regarding all aspects of food operation, cook-fresh and cook-chill ensuring the high quality and standard of food being prepared and served. Responsible for Food Safety Plan (HACCP) in accordance with the NSW Food Authority requirements. Ensure the Food Audits (internal and external) and Inspections maintain business accreditation requirements. Comply with relevant RSL LifeCare WHS policies, procedures, and reasonable instruction. A bit about you: Certification 3 or 4 in Commercial Cookery plus Food Safety Certification. In depth knowledge of the FSANZ or Vulnerable Persons Act. Current knowledge of Food Handling Legislative including HACCP requirements and knowledge of modified diets. Experience in leading and managing person centred catering operations. Demonstrated compassion, empathy, and an ability to build meaningful relationships – experience in Aged Care Residential settings an advantage. Demonstrated commercial acumen.
