The Position
:
1. Work collaboratively with a team of Chefs, Kitchen Utilities and Dining Room employees.
2. Buffet style bulk cooking for Breakfast, Crib, Lunch, and / or Dinner and Desserts
3. Ensure OH&S compliance, adhering to safe work practices and food handling procedures.
4. Ensure all catering controls are in place, and wastage is kept to a minimum.
5. Maintain high standards of food hygiene, safety, infection control and cleanliness in accordance with Compass standards.
6. Managing catering team performance and employee development
The Person:
7. Cert III in Commercial Cookery Minimum
8. Demonstrated experience at a Head Chef level.
9. Experience within bulk catering environments
10. Excellent knowledge of all kitchen procedures and operations
11. Experience in menu writing, stock control, budgets, rostering, staff mentoring, training & liaising with the client.
12. Experience with hygienic work practices and appropriate HACCP guidelines
13. A proactive leader who is professional, positive, supportive, and motivated with experience in training, and developing a team of hospitality professionals
14. Enhance workplace culture – display high levels of customer service, contribute ideas and be flexible to meet the needs of the business
15. Maintain high standards of food hygiene, safety, infection control and cleanliness in accordance with Compass standards.
