The Position
1. Assist in the planning and preparation of food production across functions, retail and in house residential menu-based catering
2. Actively maintain a high standard of food safety, allergen awareness, and OHS
3. Contribute to the development of menu ideas using local fresh ingredients
4. Assist in the mentoring of the kitchen team
5. Monitor and order stock and minimize food wastage
The Person
6. Prior experience as a Sous Chef with a Cert III (Minimum ) Commercial Cookery
7. Experience with cooking healthy and nutritious food in bulk quantities / modern menus with a focus on visual presentation
8. Strong understanding of allergen management and food safety
9. Experienced in menu development and costing
10. The ability to switch from breakfast style flair to fine-dining and function standard food
