Scope of the Roles: Overseeing daily kitchen operations, including staff delegation, stock rotation, and maintaining accurate records. Preparing and cooking a variety of dishes, either regularly or for special functions and events. Managing production schedules and staff requirements to ensure timely service delivery. Estimating food supply needs, calculating costs for ingredients, and managing orders accordingly. Inspecting supplies, equipment, and work areas to ensure adherence to established quality standards. Analyzing recipes and advising prices to menu items based on food, labour, and overhead costs. Collaborating with other team members to plan and develop recipes and menus, taking into account seasonal ingredient availability and projected customer numbers. Demonstrating new cooking techniques and introducing equipment to staff for continual culinary improvement. Ensure all workstations are properly set up, thoroughly cleaned, and efficiently organized, preparing utensils, ovens, and grills for optimal readiness at the start of each shift. Prepare and cook dishes in strict compliance with food safety and health regulations, ensuring the highest quality and hygiene standards are maintained. Assist in onboarding, training, and supervising new team members, providing guidance and fostering a collaborative, efficient work environment. Monitoring and enforcing sanitation practices to ensure compliance with health and safety regulations, including Occupational Health and Safety (WHS) and HACCP.
