Job Description
The Client Lindenow Pub Farmers Home Hotel is an old school pub with a great atmosphere that is open for lunch & dinner 7 Days a week. Their menu offers a wide range of freshly made, fire-grilled meats, mains and other dishes.
They are now looking for a Chef to join their kitchen team. This is a full time role with an annual salary set at $73,500 to $75,500 depending on experience plus superannuation, and will be based at Lindenow VIC.
Responsibilities
1. Costing menu items including costing of food and labour costs.
2. Plan, collect, estimate food and commodities for menus.
3. Skills in a wide range of cookery methods to produce a range of menu items.
4. Plan and sequence the timing of food and preparation of tasks.
5. Evaluate food products to ensure quality standards are consistently attained.
6. Examine, taste and improve all food prepared to ensure quality.
7. Follow guidelines and regulate quantities of all herbs and spices and cooking times to ensure consistency in all authentic recipes.
8. Consider instructions related to preparing orders to meet special dietary requirements.
9. Work to resolve kitchen related issues, listen to feedback and seek solutions in conjunction with fellow staff.
10. Help enforce general cleanliness and maintenance of the kitchen area.
11. Work closely with the kitchen staff, the head chef and the restaurant attendants in crafting newer, unique food items.
12. Ensure proper and adequate seasoning of all food that is served in the restaurant.
13. Knowledge of supplies, equipment and services, ordering and inventory control.
14. May select and train kitchen staff.
15. Lead the kitchen team.
16. Advise and demonstrate on portioning of ingredients and food, placing it on plates, dressing and garnishes.
17. Ensure all inventory and the general keeping of the Cold Room and advise accordingly on storing food in temperature-controlled facilities.
Requirements
1. Relevant Certificate 3 or 4 qualifications in commercial cookery.
2. Minimum 2 years of experience as a Chef.
3. Must have at least 2 years of experience in cooking over open-fire grill.
4. At least 2 years of preparing pizza dough from scratch.
5. At least 2 years of menu planning experience.
6. Must know how to create new recipes and design menu according to budget.
7. Knowledge and experience in Italian cuisine is essential.
8. Must know how to work with dietary requirements such as vegan and gluten free food preparation techniques.
9. Must be able to work with a variety of proteins including beef, pork, seafood.
10. Experience in adherence to recipe & portion control, as well as ordering and stock control.
11. Ability to follow instruction & take direction.
12. Excellent time management and attention to detail.
13. Knowledge of food safety and hygiene standards.
14. Excellent communication skills and the ability to work as part of a team.
15. Be available to work on weekends to deal with many customers.
