Job Summary
The Pullman & Mercure Melbourne Albert Park hotel is seeking an experienced Sous Chef (Banquet Kitchen) to join our culinary team. In this pivotal role, you will work closely with our Executive Chef to ensure exceptional dining experiences for our guests across our large-scale Conference & Events operations.
About the Role
* Supervise, train, and develop kitchen staff to foster a collaborative, inclusive, and high-energy working environment.
* Oversee and uphold food quality and hygiene standards in our Banqueting kitchen operations.
* Collaborate with the Executive Sous Chef to assist in menu preparation.
* Manage inventory, order supplies, and minimize waste to optimize kitchen efficiency.
* Foster a collaborative interdepartmental work environment throughout the hotel.
* Collaborate with the Conference & Events Planning team to ensure clients' visions are met and exceeded.
Qualifications
We're looking for someone with:
* Proven experience as a Sous Chef in a high-volume banquet setting.
* Strong leadership and communication skills, with the ability to delegate effectively and inspire a team.
* Knowledge of food safety standards and hygiene regulations aligned with HACCP.
* A strong ability to interact and communicate with staff, management, and vendors.
* Proven ability to design and manage efficient staffing schedules, optimizing team performance.
* Demonstrated experience in efficiently managing stock levels and overseeing invoicing processes.
* An ability to work under pressure in a fast-paced environment.
* A passion for delivering exceptional food experiences and contributing to a cohesive team.
* Culinary qualification or equivalent work experience in a similar role.
