About the Role: The ideal candidate must have a strong background in authentic Vietnamese cuisine, with the ability to prepare and cook high-quality traditional dishes while maintaining consistency in flavour, presentation, and hygiene standards. Flexibility is essential, as this role requires availability for a rotating roster, including nights, weekends, and some public holidays. 2. Key Responsibilities may include: Examining foodstuffs to ensure freshness and quality before cooking. Regulating cooking equipment (ovens, grills, woks, and steamers) to achieve the perfect texture and flavour. Preparing and cooking Vietnamese dishes, including soups, wok tosses, charcoal grilled meats, noodle dishes, and rice-based meals. Seasoning food during cooking using traditional Vietnamese ingredients such as fish sauce, shrimp paste, lemongrass, and star anise. Portioning food and plating dishes with authentic garnishes, including fresh herbs, fried shallots, and pickled vegetables. Storing food properly in temperature-controlled environments to maintain freshness and prevent contamination. Preparing meals for customers with dietary requirements, including vegetarian, gluten-free, and allergy-sensitive dishes. Planning menus and estimating ingredient requirements to reduce food waste and maintain cost efficiency. Training junior kitchen staff and apprentices in Vietnamese cooking methods and food safety practices. Ensuring compliance with food hygiene and workplace safety regulations at all times. 3. Skills & Experience Required: A culinary qualification (AQF Certificate III with at least 2 years of experience OR Certificate IV) or equivalent professional experience is strongly preferred. Minimum 1 year of proven experience as a cook in a Vietnamese restaurant, with expertise in Vietnamese cuisine being essential. Proficiency in various cooking methods, ingredients, equipment, and kitchen procedures. Ability to thrive in a fast-paced, high-volume kitchen environment.
