To be considered for this role you must have:
1. Certificate IV in Commercial Cookery or Diploma of Hospitality Management or at least three years of relevant experience in a similar position.
2. At least two years of relevant experience in a similar position.
3. Experience in cooking Japanese food and Asian cooking techniques.
4. You must be an Australian Citizen/Permanent resident or have legal working rights in Australia.
Essential Duties & Responsibilities:
1. Main Responsibilities
2. Assist the Sous Chef in managing kitchen operations and food preparation.
3. Prepare and cook high-quality Japanese dishes, ensuring consistency and presentation.
4. Participate in menu planning and kitchen budgeting to optimize costs.
5. Attend management meetings to discuss food preparation issues and solutions.
6. Maintain cleanliness and safety in the kitchen.
Main Tasks
1. Kitchen Operations:
2. Collaborate with the Sous Chef in planning daily menus, considering food and labor costs.
3. Monitor cooking times and techniques to ensure quality and timely service.
4. Contribute to minimizing waste through effective portion control.
5. Prepare and cook food according to recipes and standards.
Inventory Management:
1. Check ingredient levels regularly and assist with ordering supplies.
2. Receive and inspect deliveries for quality and accuracy.
3. Ensure proper storage of food and ingredients to maintain quality and safety.
Kitchen Maintenance:
1. Uphold strict food safety and sanitation standards.
2. Perform routine cleaning and maintenance of kitchen equipment.
Staff Management:
1. Train and mentor junior kitchen staff on cooking methods and safety protocols.
2. Delegate tasks effectively to ensure efficient workflow.
Regulatory Compliance:
1. Ensure compliance with health and safety regulations.
2. Maintain accurate records of food temperatures and cleaning schedules.
Preferred Skills and Experiences:
1. Strong knowledge of Japanese cuisine, cooking techniques, and presentation skills to create high-quality dishes.
2. Ability to efficiently manage multiple tasks and prioritize responsibilities in a fast-paced kitchen environment.
3. Excellent verbal communication skills to collaborate with kitchen staff and front-of-house personnel.
4. Strong analytical skills to identify issues quickly and develop effective solutions related to food preparation and kitchen operations.
Salary: $73,150 per annum + Super
