Daily Responsibilities Follows Costco Meat Department general and specific meat standards, procedures, and goals. Inspects and reassembles equipment sanitised the previous night. Arranges display case to assess daily production needs and rotates merchandise. Transfers cases of meat from cooler and empties contents onto the meat cutting or other prep area. Cuts, trims, tenderises, grinds meat and checks fat content per Costco specification. Follows proper department production procedures and standards for quality and consistency of finished merchandise. Transfers cut and ground meat to Styrofoam trays. Loads Styrofoam trays onto large plastic tray and transfers to large wheeled rack for wrappers. Assists with wrapping and stocking meat case. Follows Sanitation Standard Operating Procedures (SSOP) guidelines as it refers to proper cleaning and sanitation of all equipment. Completes and complies with 11 Commandments of Quality Assurance, Food Safety Certification, and all safety training required by warehouse and Meat department. Cleans and sanitises area throughout the day. Complies with health code by following sanitation standards and maintaining proper temperatures. Assists in other departments of the warehouse as necessary. Provides prompt and courteous customer service to members, employees, and vendors. Must obtain and have proof of Butcher's Trade certificate.
