Closed Dinners ABOUT THE ROLE: This role is based in the Hunter Valley JRM is working with an award winning winery in the Hunter Valley to find an exceptional Head Chef to lead the opening of their newly built restaurant due to open March 2025.
You will be the driving force of the kitchen and all things culinary.
The kitchen is brand new with no expense spared and has been skillfully designed built by industry professionals with thorough knowledge of kitchen operations.
Nestled in one of Australia's most celebrated wine regions the restaurant will be focused around Spanish/Mediterranean Cuisine incorporating locally sourced produce as well as bespoke imported products.
There will be kitchen gardens producing items for the menu and tailored around the seasons.
The venue will be focused on a relaxed premium dining experience with long lunches and world class service.
No dinner service is planned for the venue allowing you to enjoy a genuine work life balance.
The RoleAs the Head Chef, you will: Design and deliver a seasonal menu that celebrates Spanish and Mediterranean flavours, complementing the winery's offerings.
Work with the estate gardener on building a yearly planner for the kitchen gardens and projected par levels.
Recruit, train, lead and mentor a talented kitchen team, fostering a culture of excellence and innovation.
Oversee all kitchen operations, ensuring the highest standards of quality, consistency, and presentation.
Collaborate with local suppliers to source premium ingredients while incorporating select imported products.
Develop creative food and wine pairing experiences and support special event offerings.
Manage kitchen budgets, ensuring cost control and profitability without compromising quality.
Uphold strict compliance with health, safety, and sanitation standards.
About YouThe ideal candidate will bring: Proven experience as an Executive Chef or similar leadership role in a fine dining or premium restaurant.
Expertise in Spanish and Mediterranean cuisine, with a passion for fresh, local ingredients.
Strong leadership and communication skills, with the ability to inspire a high-performing team.
A creative approach to menu development and food presentation.
Experience managing costs, meeting financial targets, and driving operational efficiency.
A commitment to maintaining a collaborative and professional kitchen culture.
