We are seeking an experienced Head Chef to lead our new Mediterranean venue located on the waterfront dining precinct of Cairns. You must be enthusiastic, highly motivated, and able to work autonomously in a fast-paced, high-pressure environment.
The successful candidate will be offered a salary commensurate with experience, circa $90k - $110k negotiable for a proven candidate, plus superannuation and the opportunity to earn profit based incentives.
The Role
As a fully qualified Head Chef, you will report to the Venue Manager and assume overall leadership and responsibility for the cost-effective management of the kitchen to maximise food profitability, whilst ensuring food safety standards and total guest satisfaction. Your primary responsibilities will include:
* Leading the kitchen team in a hands-on manner, ensuring consistent food quality
* Maintaining food and wage costs in line with budgets
* Designing, costing and implementing innovative menus
* Ordering and Stock Control
* Preparing meals
* Maintaining current knowledge on food trends and competitors
* Setting, implementing and reviewing service standards to exceed guests expectations
* Total compliance of WHS, food safety, company and legislated policies
* Employee recruitment, training and development
About you
If you enjoy variety in your day and are passionate about food as well as delivering quality dishes with a flair - then this is the role for you! To be successful in this position you will have:
* 3 + Years as a Head Chef experienced in Greek/Mediterranean cuisine
* Tertiary Qualifications eg. Cert 4 in Commercial Cookery Diploma or Culinary degree in Hospitality
* A hands on management style with proven leadership qualities
* Demonstrated experience working within a similar position in a busy, high volume kitchen
* Effective communication & leadership skills with your team, management and suppliers
* Computer literacy with strong administration skills
* Experience with Cooking the Books, kitchen management software or similar
* Flare, enthusiasm and passion to create quality dishes
