* Design and plan innovative, seasonal menus that reflect the best of traditional and contemporary Indian cuisine.
* Collaborate with management to estimate food and labour costs, adjusting menus as needed to ensure profitability while maintaining quality.
* Oversee the quality of dishes at all stages of preparation and presentation to ensure consistency and excellence.
* Conduct tastings and implement adjustments to ensure each dish meets the restaurant’s high standards.
* Work closely with Managers, Dietitians, and kitchen and waiting staff to discuss food preparation issues, address dietary requirements, and refine cooking techniques.
* Ensure effective communication within the kitchen team and with front-of-house staff for seamless service.
* Demonstrate cooking techniques and advise kitchen staff on the proper procedures for food preparation and cooking.
* Select, train, and mentor kitchen staff, fostering a collaborative and efficient working environment.
* Prepare and cook high-quality Indian dishes, adhering to standardised recipes and presentation guidelines.
* Enforce strict hygiene and food safety regulations within the kitchen to ensure a clean, safe working environment.
* Monitor food storage, cleanliness, and proper handling of ingredients and equipment in compliance with health regulations.
* Oversee the freezing, preservation, and storage of food to ensure its freshness and quality, minimising waste and spoilage
Qualifications: •Certificate III or IV in Commercial Cookery (Preferred but not mandatory) Other requirements:
* Proven experience as a Chef, preferably in an Indian restaurant or similar establishment.
* In-depth knowledge of Indian cuisine, spices, and traditional cooking techniques.
* Strong leadership and team management skills.
* Excellent organisational and time-management abilities.
* Knowledge of food safety and hygiene standards.
* Ability to work under pressure and maintain high standards of quality in a busy kitchen environment.
