Responsibilities: Preparation and baking of White Sourdough, Wholemeal Sourdough, 7 Grain Sourdough, Light Rye Sourdough, Dark Rye Sourdough, and Fig and Berry Sourdough loaves of bread; Performing cutting, moulding, and mixing dough skills for artisan bread and sourdough bread products; Monitoring oven temperatures and product appearance to determine baking times; Precisely scale, shape, and score loaves. Assure finished baked products meet quality standards; Mix and process dough, set time and temperature for the best proving and baking procedures; Accurately follow recipes in the preparation of all dough. Correctly and safely utilize all mixing, lamination, and baking equipment; Ensure that all bakery areas and equipment are safe and sanitary in accordance with food handling procedures; Weigh and measure ingredients, shaping baking mixtures, operating and monitoring rack ovens and setter ovens, producing breads for daily ordering lists or according to certain recipes; Perform other duties to ensure that customer needs are satisfied and the bakery is well-stocked and operating smoothly; Manage needed supplies and inventory levels; Ensure the proper storage of baking utensils; Order and receive supplies and materials; Clean and restock workstations and ensure that all equipment is sanitized and prepared for the next shift; Clean, dismantle, and store all baking equipment, including ovens, mixers, proofer, floors, freezer, and refrigerators; Maintain a clean and sanitary work area by following hygiene and safety standards; Assess the quality of raw materials before baking; Testing ingredients and finished goods to ensure that each item meets food safety and quality controls; Ensuring an appropriate supply of all prepared products as well as proper storage and refrigeration; Measure and mix ingredients according to recipes and production schedules; Shape and form dough using molds, cutters, rollers, and other shaping tools; Knead, roll, cut, and prepare dough as needed; Ensure all baked goods are of high quality and meet customer expectations; Monitor oven temperatures, speed settings, mixing machines, and other baking equipment; Ensure the quality and freshness of products by checking the appearance, taste, texture, and expiration dates.
