Breton Craft House is seeking a team-focused, creative, and motivated Executive Chef to lead our kitchen team at our new downtown location. We are looking for someone who is creative and open to providing alternatives to dietary restrictions, helping us to create a welcoming and inclusive space! As the heart of our culinary operations, you will inspire and mentor a talented team and craft exceptional menus. You will be responsible for overseeing the daily kitchen operations, menu planning, inventory management, and staff training, all while ensuring the highest standards of quality and presentation. ResponsibilitiesLeadership & Team Management: Lead, motivate, and manage kitchen staff, ensuring a positive work environment and high morale. Conduct regular performance evaluations and provide constructive feedback to kitchen staff. Schedule and coordinate kitchen shifts, ensuring adequate coverage during peak hours. Oversee staff training and development, promoting a culture of excellence and continuous learning.Menu Development & Food Quality: Work with Management to design, plan, and implement innovative and seasonal menus that align with the restaurant's concept and customer expectations. Ensure the preparation and presentation of food is consistent with the highest quality standards. Create and test new recipes and menu items, keeping up with current food trends.Inventory & Ordering: Oversee inventory management, ensuring that the kitchen is adequately stocked with necessary ingredients and supplies. Coordinate with suppliers and vendors to order ingredients, ensuring cost-efficiency and quality. Minimize food waste and ensure proper storage of all ingredients to prevent spoilage.Health & Safety Compliance: Enforce food safety and sanitation standards in the kitchen, ensuring adherence to health department regulations. Conduct regular kitchen inspections to ensure cleanliness, safety, and organization. Train staff on safe food handling, preparation, and storage procedures.Budgeting & Cost Control: Manage kitchen costs, including food costs, labor costs, and inventory control, to meet budgetary guidelines. Implement strategies to reduce waste and increase operational efficiency. Monitor portion control and adjust as necessary to optimize profitability.Customer Satisfaction: Ensure that all meals are prepared to order and meet quality and presentation standards. Professionally handle customer complaints and feedback, addressing any food-related issues promptly.Collaboration with Front of House: Work closely with the front-of-house team to ensure seamless communication between the kitchen and dining area. Collaborate with the restaurant manager and other key staff members to ensure smooth service and overall guest satisfaction.QualificationsProven experience as an Executive Chef, Head Chef, or similar managerial role in a high-volume kitchen environment.Experience working with sourdough and brick oven pizza.LocationSydney, NS
