About the role
We are seeking a Catering Chef on a 3-6 month fixed term, full time basis. Reporting to the Catering Supervisor, the Catering Chef helps manage the onsite Catering team. This hands-on position oversees day-to-day kitchen operations to provide high-quality catering across the business including onsite catering, onboard vessels and at Reefworld – a permanently moored pontoon, located 39 nautical miles offshore on the Great Barrier Reef. The Catering Chef also assists with private charters and function events.
The Catering Chef is responsible for maintaining high-quality menu preparation and presentation, ensuring the standards of service are always exceeded to maximise the guest experience. They are also responsible for maintaining a high standard of hygiene, cleanliness and general safety of all staff working in food preparation.
The Catering Chef must contribute to a strong, positive team environment. The Catering Chef also requires undertaking relief work at Reefworld when the Reefworld Chef is absent: sick or on leave.
Key responsibilities include, but are not limited to:
1. Hands-on management of day-to-day kitchen operations to provide high-quality catering across the business including the onsite catering, onboard vessels and at Reefworld
2. Prepare menus and provide input for new ideas in collaboration with the Catering Supervisor
3. Understand and cater to food allergies and dietary requirements
4. Ensure appropriate storage of food items and safe transportation of food
5. Ensure high standards of hygiene, cleanliness and general safety
6. Stock procurement and monitoring portion and waste control
7. Provide mentorship and guidance to Cooks and Kitchen Attendants
8. Strong leadership skills to manage and motivate a team
9. Foster a positive and collaborative working environment
About you
The successful candidate will be flexible to work at various times throughout the day, either early mornings or afternoon starts with late finishes in our off-site catering facility. The ideal candidate will have a true passion for high quality food with a real commitment to delivering the best standards of food, ensuring our guests leave with lasting memories! You have an energy that’s dynamic and you have fun when you work! To be successful in this role, you will have/be:
10. Commercial cooking and knife skills
11. Be highly self-motivated, with great energy - A real multi-tasker;
12. High level attention to detail;
13. Have proven ability to work autonomously and part of a team;
14. Ability to work flexible hours including weekends.
15. Ability to manage time effectively, especially under pressure
16. Excellent communication skills for interacting with staff in the kitchen and on water.
Requirements
17. Minimum 3 years in a similar position, preferably with bulk food preparation experience
18. Cert III in Commercial Cookery
19. Driver Licence
