Role
The Catering Manager plays a vital role in leading the kitchen and wider catering team to support students in having a positive learning experience whilst living away from home. To provide high quality, nutritious and sustainable food service, assisted by a catering team. To deliver food in line with the schools practices, policies and procedures to students and staff within the context of the teaching and learning programs within the school. The Catering manager will work to:
Design, and deliver residential menus that are seasonal, sustainable and nutritious.
Design and deliver menu options for offsite (expedition and basecamp) student learning.
Provide a financially effective and efficient service operating to the highest standards of food safety.
Ensure compliance and current practice/qualifications commensurate with position and duties.
Follow legislative and local policies, procedures and practices.
Support the professional development of the catering team.
Report to the Campus Principal support an improved understanding of mealtime being a key part of residential living.
Responsibilities
The Catering Manager plays a key role in ensuring that students learning away is supported by the provision of nutritious and healthy food. The Catering Manager supports the teaching and learning programs of the school by:
Assist with the preparation of the annual catering budget.
Manage the campus catering budget.
Menu planning using nutritional standards, in consultation with teaching staff.
Ordering of all goods required to make the appropriate meals for the incoming groups, using the schools online ordering system.
Identify and engage suppliers who meet the specifications of the school sustainable purchasing policy and practices.
Receipting and checking off of all goods.
Preparation, cooking and serving of meals as per the student attendance requirements.
Provide special need meals for groups or individuals, for example diabetics or vegetarians, taking into the account dietary needs of students and any cultural and/or religious requirements.
Removal of all waste and packaging from the kitchen, at the end of each service period to containers provided by the school. The Catering Manager shall comply with local site requirements that exist for composting and for recycling plastic, glass, aluminium and paper based products.
To continue to develop knowledge and skills in existing methods of food management in a commercial kitchen environment.
Increase knowledge of new operating systems and explore their possible application to the school setting.
Explore and develop menu and meal options in accordance with environmental sustainable practices, nutrition requirements of students and the educational expectations of the school.
The on site management of the Catering Assistant, this will include the designation of duties and coordination of daily tasks.
Induction and training of staff within the catering and safe food handling field.
To keep all food preparation, serving and eating areas in full compliance with current health regulations and legal hygiene standards. The Catering Manager shall meet all requirements of the Victorian Food Hygiene Strategy and amendments to the Food Act.
Manage safety procedures in accordance with school policies.
Attend training courses as required for personal development and mandatory training.
Manage the OHS practices and record keeping for kitchen operations.
Undertake any other duties and responsibilities as directed by the Principal or identified delegate.

Location Profile
Rubicon Outdoor School is a specific purpose outdoor state school working with government secondary students. Rubicon comprises two campuses: Thornton Campus is located in the picturesque Rubicon Valley approximately 100 km north-east of Melbourne, on the edge of the Great Dividing Range. The Nayook Campus, located near Neerim Junction at the foot of Mt Baw Baw, is approximately 100 km east of Melbourne in a bush setting. The school has a long history of excellence in teaching and learning in the outdoors. Rubicon provides teaching and learning programs within both residential, basecamp and journey based spaces and a history of consistent innovation and improvement in Outdoor and Learning Away practices. Students attend for approximately five days and live either; onsite as part of a residential program or with their group in the context of an expedition or basecamp program away from the campus cooking on camp stoves or, where applicable, camp fires. The majority of the role is the running of the commercial kitchen located onsite at the Thornton Campus where this role is located.
