We are seeking a passionate Sous Chef to join our amazing team at one of Canberra's icons, the Statesman Hotel. A favourite among locals, our newly renovated establishment features a 200 seat restaurant and variety of function spaces. Our team is responsible for ensuring an incredible culinary and hospitality experience for all of our wonderful patrons.
Our kitchen team services a 7 day trade in the Hotel for lunch and dinner service. The offering revolves around classic pub fare, however our kitchen team also enjoys the opportunity to be creative through our incredible monthly specials.
Key Duties:
* Directing the food preparation process and delegating tasks,
* Cooking and preparing high quality dishes,
* Assisting the Head Chef to create menu items, recipes and develop dishes,
* Supervising all kitchen stations,
* Supervising, motivating and working closely with all other chefs of all levels,
* Assisting and determining food inventory needs, stocking and ordering,
* Assuring the kitchen meets all regulation including sanitary and food safety guidelines,
* Being responsible for the kitchen in the absence of Head Chef,
* Checking stock rotation and support the minimisation of food wastage,
* Complying with and championing positive work health and safety practices,
* Complying with and promoting good food hygiene practices.
Position Requirements/Qualifications:
* A minimum of 1 year experience in a professional kitchen
* Must be competent and versatile across all kitchen operations
* Ability to remain calm under pressure and work effectively within a team
* Strong understanding of food safety and hygiene practices
* Certificate III and IV in Commercial Cookery preferred
* A commitment to working in a positive and caring workplace.

Pay: $73,150.00 – $80,000.00 per year
