The Role
Reporting to the Executive Chef and Head Chef the Junior Sous Chef will be managing the Breakfast kitchen and in the role, you will:
* Ensure adequate mis-en-place and forward planning in all outlet;
* Ensure that all staff adhere to standards in order to provide a consistent, high quality product for the guest. This includes the standardisation of all recipes and the final presentation of food items;
* Actively contribute ideas and suggestions regarding new menus, recipes, and ways of improving consistency, product, revenue performance and the overall smooth operation of the kitchen;
* Oversee all documentation completed by CDP’s (e.g. Ordering consolidation and ordering sheets);
* Ensuring that food costs are maintained to meet the target set by the hotel.
Talent Profile
* High school education and diploma in culinary is required
* Deep understanding of culinary trends and the ability to implement them creatively
* Previous experience in a breakfast or brunch-focused role is preferred.
* Previous experience in a fast-paced environment or in a 5 star hotel environment
* Excellent communication skills and leadership skills.
* Exceptional attention to detail.
* A thorough understanding about Food Safety and HACCP
