PURPOSE OF THE POSITION The Senior Specialty Chef for Japanese/Asian Cuisine is tasked with having a deep knowledge of Japanese and Asian culinary techniques, commitment to hygiene and safety standards, and the ability to elevate the team's knowledge and expertise in this exciting cuisine.QUALIFICATIONS / LICENSES / SKILLS Fluent in English Minimum of 5-7 years in Japanese/Asian cuisine, preferably in fine dining or high-volume settings Experience managing a kitchen team, mentoring junior staff, and fostering a collaborative environment.Diploma in Formal Culinary Disciplines highly regarded.o Organisation, time management, team building DUTIES Mastery of traditional Japanese cooking techniques (sushi-making, ramen preparation, etc.)and other Asian cuisines (Thai, Chinese, Korean).Ability to innovate while respecting traditional methods.Expertise in plating and presentation to enhance dining experiences..Efficient in planning and executing multiple dishes simultaneously.Proven ability to maintain quality and composure during high-stress situations.Genuine interest in Asian culinary arts and culture., and able to pass this enthusiasm to the junior team.Co-ordination of junior team for productivity, development of expertise and teamwork in a collaborative environment..
