**Job Title:** Senior Chef de Partie
**Job Summary:**
We are seeking a highly skilled and experienced Senior Chef de Partie to join our team at DoubleTree by Hilton Melbourne. As the right-hand person to the Head Chef, you will play a critical role in managing the day-to-day running of the kitchen and driving high-quality food production for hotel outlets.
**Key Responsibilities:**
* Ensure seamless food production throughout all meal periods, including meetings, events, and team member meals.
* Train the team and uphold food safety practices across the kitchen brigade.
* Order stock and hold team members accountable for stock rotation.
* Assist the Head Chef with menu development.
* Complete daily food orders when required, while maximising ingredient use to minimise waste.
* Maintain kitchen equipment cleanliness and good working order.
* Ensure all kitchen team members meet hotel, hygiene, and Work Health and Safety requirements.
* Develop positive relationships with guests, team members, and contractors.
**Requirements:**
* A minimum of 3 years' experience in a similar role.
* A current, valid, and relevant trade commercial cookery qualification.
* Excellent planning, organising, and time management skills.
* Extensive knowledge of kitchen equipment and ability to train staff in its use.
* Knowledge of food safety systems.
* Ability to prioritise and complete tasks on time.
* A current, valid Food Safety Supervisor Certificate for Hospitality.
