The B Division in Pentridge has been transformed into a 100-seater wine bar where ancient cells are now home to luxurious fit-outs, velvet curtains and exposed bluestone walls showered in dim lighting. Olivine is a wine bar like no other.

Since its inception, Olivine has quickly become a destination in its citadel-like surrounds sitting atop the north. As you move through the space past heavy timber doors and tall bluestone walls, you are gradually walking away from the outside world to a place lost in time.
Guided by your sommelier through this unconventional space, you will find yourself nestled in a private booth with the book of wine rich with narrative, bespoke wine maps and illustrations. Distant sounds of Champagne popping and hushed laughter ignite epicurean chatter. Your evening has just begun.
The Opportunity
This is an exciting role in one of the country’s most talked-about wine bar openings, presenting a fantastic opportunity to the ideal candidate to work in a unique project. You will be working with a world-class wine program with a dynamic list of wines and artisan spirits and a team of passionate likeminded individuals. A big part of the job is the ability to lead a team and run a busy and vibrant service.
With previous experience managing the floor and a big love of wine, the wine bar manager will be responsible for managing and executing day-to-day operations to keep the venue at optimum performance. Optimising bookings and supporting the Wine Curator in wine management as well as the Venue Manager in venue management are the hallmark of what makes for a sharp and efficient wine bar manager. With a strong wine-mentoring environment, consistent training and WSET courses offered by the company, there will be an organic growth in wine knowledge and skills in wine service. You will therefore be supporting the sommelier team in executing wine events and experiences.

The Ideal Candidate Must Have:
* Demonstrated experience managing the floor either in a busy bar, or a restaurant
* Good knowledge in cocktails, beer, and spirits
* Experience with ordering and stocktake
* Exceptional service skills and guest focused
* Adaptable and able to perform in high-pressured service periods
* Proven ability in building effective relationships with locals and suppliers
* Organisational and time management skills
* Exceptional communication and presentation
* Available and willing to work weekends, public holidays, opening and closing shifts
* Must possess a valid Victorian RSA certificate
* WSET Level III or CMS Certified Sommelier preferred, but not compulsory as long as continuously learning more about wine is a top priority.
