The Federal Hotel Kalgoorlie was built in 1901 and although it has been closed for the last 10 years, it still has the reputation of the best pub in town with the Kalgoorlie/Boulder locals. The venue was recently acquired, has had quite the face-lift, and is now gearing up to get its doors re-open in the coming months – hopefully with quite the bang!
Hence, we are looking for qualified applicants who want to be involved in this once in a lifetime experience, in the role of Head Chef – to apply to come and join us!
We are seeking a thoroughly experienced candidate for this role - someone who has preferably had experience in the startup or acquisition of a food premises venue and understands the systems and integrations which will need to be established in order to comply with all National food safety standards and council requirements, who can create and prepare seasonal menus to gain the reputation of the best pub in the local area and who can recruit and build a team of their own, who take pride in their work, are responsible within their duties and who are invested in the success of the business redevelopment, reopening and then continuous growth.
The candidate will need a wide range of skills and attributes, must be flexible, enthusiastic and have a sound knowledge of food and kitchen trends. With the vision of becoming the new and best 'place to be' within the Kalgoorlie/Boulder area, we are wanting to re-open for lunch and dinner service periods, with a possibility of including breakfast in the future, so there will be a range of different working hours and conditions which both we and you can provide.
All applicants MUST be competent in the below tasks, or need not apply - as they will be responsible for the daily preparation, storage, and supply of food, to both in-house guests and casual diners alike.
Experience in the management and operation of a kitchen and kitchen team, with the responsibility and accountability of achieving the food businesses objectives, targets, and budgets, ensuring the maximization of revenue in all possible areas. Has a sound knowledge in the preparing, cooking, and presentation of high-quality dishes within each kitchen section and preferably within a range of differing cuisines – as well as the ability to train and implement this knowledge with all other team members. Ensure that the business can be as profitable as possible – understands how to achieve labour control standards according to sales, through implementing appropriate budgets, rosters, recruiting appropriately and controlling wage targets on a day-to-day basis. Ensure that the business can be as profitable as possible – has a sound understanding of the cost of goods, services, maintenance and freight and the appropriate gross profit margins and can create menus/specials in accordance. Ensure the security of stock, establishing approved suppliers, recording goods inwards and stock transfers, calculating consumptions, inventory rotation procedures, stock/portion control implementation, wastage minimisation and to establish or integrate a program to perform the necessary kitchen stock take requirements. Has the ability to implement, co-ordinate and record all OH&S and National Food Safety Standards and to establish asset/equipment maintenance and operating procedures and standards, ensuring the adherence to the food safety program and HACCP requirement. A born leader when it comes to the management of the kitchen team and can fulfil the required training and supervision of staff, as well as consistently and continuously monitor their performance to ensure that the required knowledge and skills are applied on a day-to-day basis and develop an atmosphere of team spirit. Since you will be part of a larger kitchen and F&B brigade, it will be necessary that you can establish and maintain effective cooperation and communication with all other stations and departments - This will ensure that our kitchen will operate smoothly and that we can solve any issues which may arise, in an effective manner, with a team effort. Get involved in the brand, vision, and execution of the renovation process and buy-in with all aspects of the food and beverage departments, to maximise each customer experience within the venue and to ensure that feedback is of a positive nature.
