With a capacity of more than 100,000, the MCG is the largest sporting stadium in the Southern Hemisphere. Hosting several Australian Football League (AFL) teams, as well as cricket matches, concerts and special events and non-event-day functions. This is a exciting opening to join our team in a key leadership role, based in the heart of Melbourne. We are seeking an inspiring and innovative Chef de Cuisine to lead our diverse culinary team. The ideal candidate will bring extensive experience in upmarket café and restaurant operations, a history of successfully managing multiple kitchens, and a strong track record of commercial acumen. Oversee culinary operations across the MCGs Cafes and Staff Dining, including Hugh Trumble Cafe and the Paddock Cafe. Develop innovative menu concepts that align with current food trends and guest preferences. Delivery operation of event-day and non-event day catering, across a variety of cuisines. Leading a culinary team to success, training and strong leadership. Set, implement and review high food service standards, implement systems. Support with control of the department budget and food costs, embrace and follow our IT systems. Managing performance and labour costs for permanent and casual kitchen staff. Championing on-site food safety and HACCP accreditation. Combining with other F&B arms to provide first-class dining to all customers. More about you A successful track record of managing large-scale or high-end restaurant kitchen operations (venue/event experience will be highly regarded). Demonstrated success in leading, developing, and motivating a large and diverse kitchen team. Experience with menu setting and stock control. Demonstrated commercial acumen, experience delivering business outcomes. Appropriate culinary qualifications. Competence in using business technology such as stock control systems, spreadsheets, accounting systems. Excellent communication and leadership skills at all levels.
