About this role:
The Cook at Mataranka Roadhouse is responsible for the day to day kitchen operations on location at Mataranka Roadhouse. Reporting to the Operations Manager the primary responsibilities include creating, costing and executing a breakfast, lunch, dinner and snack menu that meets the requirements of the roadhouse and target customers.
The Cook must also deliver on all aspects of a busy and demanding kitchen operation, manage stock control and ordering, control food costs in line with budgets and minimise wastage. Due to the nature of working remotely in a roadhouse business and the seasonality of the Northern territory Top End, this position is also an integral part of the customer service team and the Cook is also required to perform front of house duties including serving customers over the counter and delivering meals. A high level of kitchen cleanliness is required along with good customer service and the ability to follow systems, policies and procedures set out by the company.
Key Responsibilities:
· Follow Menu and implement practical and tasty bakery menu items that meet the COGS (cost of goods sold) budget.
· Uphold supplier agreements to ensure consistency with supply and pricing
· Understand the importance of dietary requirements and special requests from our customers in particular gluten free.
· Work with front of house staff to train them in the areas of menu knowledge
· Provide menu tastings from time to time to ensure staff are trained in terminology and preparation methods – giving them the tools to better sell dishes and improve their overall food knowledge
· Create regular specials and run the same special for no more than a few days at a time (with consideration to minimising wastage)
· Where required serve customers over the counter and deliver meals during quiet times in the kitchen.
· Cost all menu items in line with 30% food cost
· Provide weekly reporting to the Director on food costs, kitchen challenges, constraints and successes
· Follow policies and procedures set by the company
· Implement policies and procedures. In consultation with the Owners revise and improve and if required develop new ones.
· Ensure you and the team open, close and operate the kitchen according to checklists and standard operating procedures.
