About the role ...
The Chef de Partie in the Aged Care Production Kitchen is responsible for managing a specific station within the kitchen and overseeing the preparation of high-quality, nutritious meals that meet the dietary needs of elderly residents.
Working as part of a kitchen team, this role involves ensuring consistency, safety, and compliance with all food safety and hygiene regulations.
The Chef de Partie will collaborate with the Food Services Manager (FSM) and other kitchen staff to ensure that food is prepared in large quantities, while maintaining attention to detail and ensuring all dietary requirements (including texture-modified diets) are met.
The ideal candidate will have a passion for cooking, strong organizational skills, and an understanding of the nutritional and dietary needs of elderly residents.
Your experience in a similar position will be highly regarded.
Some of the key responsibilities of the role include: Oversee a designated station within the production kitchen, ensuring the timely preparation of meals that are nutritious, delicious, and appropriate for the elderly residents' dietary requirements.
Ensuring adherence to recipes, food preparation techniques, and safety standards.
Prepare and cook large quantities of food, ensuring portion control and consistency in taste, appearance, and presentation.
Work with the FSM and Nutritionists to ensure meals are tailored to meet the specific dietary needs of residents (e.g., low-sodium, diabetic, gluten-free, texture-modified diets).
Ensure that all food production adheres to food safety standards, including proper food storage, temperature control, and sanitation practices.
About you ... A preparedness to work to the 10 principles of the Eden Alternative philosophy Self-motivated with a flexible, caring and patient attitude Ability to effectively manage time Multilingual or ability to speak other languages.
Experience in training of food handling for staff Qualifications Qualified Chef A current certificate in food safety supervisor / food handling Certificate III or IV in Commercial Cookery (or equivalent) is preferred.
Victorian Driver's licence Skills: Proven experience as a Chef de Partie or in a similar role in a production kitchen.
Sound knowledge of food safety practices, including HACCP regulations.
Understanding of the dietary needs and nutritional requirements of elderly residents, including texture-modified diets.
Understanding of portion control and large-scale food preparation techniques.
Experience with batch cooking and the ability to adapt recipes for large quantities while maintaining food quality.
A police check with no disclosable outcome, current flu vaccination and a COVID-19 vaccination is required by MiCare for this position.
A commitment to work exclusively with MiCare Residential Aged Care facility as your only employer during COVID-19 will be highly regarded.
