Located in Parkville, this tertiary residential college, is one of our premium catering partners. It is home to 400 fulltime residential students along with day students and hosts a range of events. The college has clear expectations for excellence in all areas of in-house dining and event catering.
The Role
We are seeking a highly experienced Head Chef to join our company and lead a dedicated kitchen team, while delivering exceptional food in a fast-paced production, dining room and events kitchen environment whilst always maintaining a professional attitude. This role will report directly into the Venue Manager. You will be part of the business planning, designing and decision making of the menu development and the general operation in this prestige venue.
Offering a unique work life balance this position has the challenges found at the premium end of our industry but with the opportunity to take advantage of the colleges down times during college holidays. Predominately shifts are Monday to Friday - Remaining flexible with events .
This is a hands-on role but you will be backed by a strong and experienced team allowing you to strategically work ‘on’ the business as well as ‘in’ it. Key performance areas will include the quality control and menu delivery for over 200 events per year ranging from small boardroom style events to major 400 person sit-down events and up to 1000pax cocktail, purchasing, cost control and compliance.
The head Chef will bring strength of understanding in production techniques to get the best of the state of the art equipment efficiently delivering 1200 plus tasty and nutritious meals per day for boarders and staff. A natural leader you will need to be comfortable in communicating clear goals for your team, attend meetings with the client and your head office support.
You
* Minimum 5 years Head Chef experience across several types of professional cookery that may include restaurants, 5 star Hotel, corporate and Event catering
* Extensive experience working in a fast paced, high output production environment.
* The ability to achieve business goals, financial budgets and quality standards
* May have had experience in a similar role at a premium college
* Will lead and inspire teams to create a professional, safe and harmonious brigade
* Be very proficient in the design and cost planning of dining room (production), function, special events and canapé menus
* Strong creativity and ability to think outside the square while coaching and developing a team
* Demonstrated ability to manage associated kitchen Cost of Goods and Wages
* Extensive, current and active knowledge and passion for quality produce, industry trends and advanced cookery techniques, including management of allergens
* Experience in compliance and maintenance of a fully HACCP approved workplace and industry standard safe work practices. standard knowledge of Health, Safety and Sanitisation procedures
