Vines Restaurant at Hollydene is seeking an experienced Chef with an unrivalled passion for serving up beautiful food.
The Role
Reporting to the Director, you will help oversee a kitchen team of up to 6 team members.
Your duties will be to plan and organise the preparation and cooking of food in our Restaurant, these will be varied and incorporate all aspects of a commercial kitchen including:
Plan, design and create menus.Budgeting including estimating food and labour costs and stock control.Monitor the quality of dishes at all stages - preparing, cooking and presenting.Prepare, cook, freeze and preserve food.The management and enforcement of food hygiene practices and overseeing the maintenance of kitchen and food safety standards.Discuss food preparation issues with management, dietitians (when required) and other kitchen and wait staff.Recruit, train and mentor your colleagues.Assist in managing team rosters.A team player, you will also liaise closely with the Restaurant Manager regarding stock ordering and the smooth running of both front and back operations.
You will also be expected to work and make decisions independently when required.
This is a full-time position.
A minimum of 2 years' experience as a Chef is preferred.
An indicative base salary will be an hourly rate plus superannuation based on your level of experience.

Hours average 38 per week - extra with evening functions and weddings.
Current Restaurant hours are 8:30 am - 4:00 pm Wednesday to Sunday (Breakfast and Lunch, with some night functions).

Vines Restaurant at Hollydene is an integral part of Hollydene Estate Wines which has been operating since 2003 across three of the oldest vineyards in the Upper Hunter Valley.
Encompassing a 120-seat restaurant supported by a 50 seat alfresco and 50 seat barrel function room, as well as a modern cellar door and bar, the Vines Restaurant at Hollydene is unique.
Located at 3483 Golden Highway, Jerrys Plains NSW 2330, with stunning views over the Wollemi National Park, the Restaurant is located 1.5 hours from Newcastle and 2.5 hours from Sydney - providing for a great diversity of clientele from local to city-based.
