The Star Sydney is currently accepting applications for an Executive Sous Chef .
Our Executive Sous Chef is a motivational leader with several years of experience gained in Culinary management of a large brigade. You will be able to demonstrate strategic planning, resource management and cost control whilst also keeping the guest experience at the heart of what we do. You will lead by example and have an innate ability to inspire a diverse team of culinary professionals at different stages of their careers.
A few of your responsibilities:
1. Overseeing food preparation across the properties Food & Beverage outlets to ensure quality standards are met
2. Responsible for the professional, efficient and effective operation of culinary operations and menu preparation
3. Monitoring and overseeing the quality/consistency of food ensuring the highest standards are achieved to exceed customers' requirements and drive visitation
4. Overseeing the preparation of daily food orders and monitoring of food costs
5. Evaluating, developing and implementing operating techniques in order to maximise and maintain efficiency, ensuring budgetary requirements for labour and operational expenses are met
6. Providing direction and support to the team, including recruitment, training, and development and performance management
7. Managing employee absenteeism, annual leave, time and attendance and workers compensation cases
To be successful in this role, it's essential you are an inspirational leader, innovative, motivating and an experienced mentor. In addition to this, you will have:
8. Previous experience at an Executive Sous Chef or Chef De Cuisine level within a large team
9. Proven ability to drive financial results with a customer led focus
10. Strong and effective communication skills
11. Ability to work collaboratively with internal and external stakeholders
12. Understanding of Food Safety and Food Handling regulations
13. Comprehensive understanding of current food trends
14. Project Management experience
