Position: Baker Position Type : Full-Time Salary: $73,000 to $76,000 plus superannuation per annum Location: Deer Park VIC 3023 Our client is seeking an experienced Baker to join their Bakery located in Mornington, Victoria. Duties and Responsibilities: Making dough by following the recipe card by measuring the ingredients in the mixing bowl Cutting the dough with dough cutting knife Dividing the dough into required product Use the moulding machine to mould the dough into different types such as rolls, blocks of bread, bread sticks, and much more different variety of breads into their design Loading tins and trays into proofers and into ovens Mixing and kneading dough and preparing other ingredients Weighing ingredients as required and calculating yield based on a given batch weight or flour weight Cutting and weighing dough and batter into portions with divider knife. Unloading the ovens and arranging for cooling of products by placing them on cooling racks Monitoring oven temperatures and bread appearances to determine baking times. Mixing icing or other decorating mixtures Perform icing with brushes or spatulas, icing cupcakes and cutting and wrapping Placing decorative mixture into an icing bag fitted with a nozzle of a specified size and shape Tinting the mixture using food dyes to achieve the desired colour Adjusting water temperature to meet final finished dough temperature requirements. Reading and interpreting work instructions Greasing the baking tins and lining them with waxed paper Inserting doughnuts, pies, and cookies into oven, and removed baked products. Keeping supplies in a well-organized & tidy manner Cleaning and washing up all the equipment and tools used every day Inspecting product for quality during and after baking and made appropriate adjustments Mixing sugar dough, croissant dough, puff dough and cookie dough Monitoring oven temperatures and product appearance to determine baking times Moulding dough into loaves or other shapes, and placing in pans Operating machines which roll and mould dough and cut biscuits Performing sheeting and rolling out dough for tart shells or cookies Spreading or sprinkled toppings if required Following safety and sanitation rules and regulations. Requirements: Certificate III or Certificate IV in Baking At least two (2) years of relevant experience as a Baker.
