Hello! We are Chotto Motto, a unique Japanese restaurant in the heart of Collingwood. We seek an experienced and motivated bar manager to join the team and work closely with the venue manager. The Bar Manager will oversee bar operations and ensure excellent service for our guests. To be successful in this role, the ideal candidate will have experience working as a bar manager and a good understanding of what makes great customer service.Key Responsibilities:Bar Operations and SupervisionWork in the bar during service.Count till and write shift reports as required.Oversee bar operations and ensure health and quality standards are maintained.Conduct monthly stocktakes and track wastage reports quarterly.Run food, drinks, clear tables, and assist FOH team when appropriate.Manage weekly bar labour costs and monthly average spend reports, with quarterly sales analysis.Ordering, Invoices, and Financial ReportingPlace weekly orders and organise bar invoices.Track drink costings to optimise profit margins, liaise with suppliers, and negotiate prices.Monitor sales performance, control costs, and report on financials weekly and monthly.Menu ManagementManage seasonal changes to the cocktail menu, quarterly updates to the wine list, and periodic adjustments to the rest of the drink list.Work with suppliers to source seasonal and trendy beverages, as well as glassware and barware.Staff Management and TrainingHandle recruitment and training for new bar staff.Organise staff engagement and training sessions, including brewery tours and drink information sessions led by experts.Schedule weekly rosters for bar staff in coordination with the venue manager.Customer Service and Quality ControlEnsure guests have a positive experience by fostering a warm and welcoming environment.Address guest issues professionally and handle special requests diplomatically.Requirements:Minimum 2 years of experience in a bar manager or similar role.Strong leadership and interpersonal skills, with a passion for hospitality.Ability to work independently and in a team, with a proactive approach to problem-solving.Knowledge of bar inventory management, point-of-sale systems, and responsible alcohol service guidelines.Availability to work flexible hours, including evenings, weekends, and holidays.What We Offer:40% discount on all Chotto Motto pantry products.Funding support for industry-related education.Opportunities for career and skill development.Daily staff meal.A creative atmosphere where you can contribute to unique customer experiences.Your application will include the following questions:Which of the following statements best describes your right to work in Australia?How many years' experience do you have as a Bar Manager?How many years of people management experience do you have?Do you hold a current Responsible Service of Alcohol (RSA) certificate?Have you worked in a role which requires a sound understanding of classic cocktails?Have you worked in a role where you were responsible for stock control?
