Mondrian is a way of travel.With its groundbreaking design and progressive programming, it is a "must" destination for locals or travellers.Mondrian is always at the heart of the most exciting cultural scenes in the world, serving up innovation and creativity for everyone.Mondrian provides a playful framework so that guests and locals alike can immerse themselves in the culture of each city it inhabits.Mondrian Gold Coast is set to debut on the sun-drenched esplanade of the iconic Burleigh Beach in Q1-2025.This destination lifestyle precinct is a vision of some of Australia and the world's most celebrated changemakers, risk takers and creative thinkers.Mondrian Gold Coast is an immersive precinct that reflects the culture of one of Australia's most iconic coastal destinations.Join our cultural precinct of imaginative spaces that reflect sun, sand and surf enveloped around dynamic dining, entertainment, a cutting-edge spa with a world-class edge.We're seeking creatives, innovators and disruptors who challenge the status quo and are ready to be agents of change as we usher in one of the most exciting, progressive and forward-thinking brands set to make Burleigh its home.Job Description The Food Safety Manager is responsible for ensuring that all food safety, hygiene, and sanitation standards are met and maintained across all venues in the Mondrian Gold Coast.This includes developing, implementing, and monitoring food safety protocols, conducting regular audits, training staff, and ensuring compliance with local and national food safety regulations.The role also involves liaising with health authorities and ensuring that the venues maintain high standards of cleanliness and hygiene.You will also be responsible for overseeing the operation and management of the external Stewarding Company with rostering and liaising with the Operations Manager of the Stewarding team, identifying opportunities for improvements and efficiencies.Food Safety Management Develop, implement, and maintain food safety management systems (HACCP or equivalent) across all restaurants.Ensure compliance with local, state, and federal food safety regulations.Monitor food handling, preparation, and storage processes to ensure they meet safety standards.Conduct regular inspections and audits of kitchens and food preparation areas.Identify and mitigate potential food safety hazards.Hygiene and Sanitation Develop and implement cleaning schedules and protocols for all areas of the restaurants, including kitchens, dining areas, and restrooms.Ensure that cleaning and sanitation procedures are followed consistently by all staff.Oversee the proper maintenance of sanitation equipment.Ensure waste management procedures are in place and followed.Work closely with kitchen and front-of-house teams to ensure a seamless integration of hygiene practices.Team Training and Development Train team members in food safety, hygiene, and sanitation best practices.Conduct regular refresher training sessions to keep team members updated on the latest food safety standards.Train the external Stewarding team on required Food Safety compliances and identify gaps.Monitor team performance and provide feedback to ensure adherence to hygiene protocols.Collaborate with the People and Culture team to incorporate food safety into the onboarding process for new hires.Ensure Ennismore and Accor training initiatives are implemented with particular emphasis on coordinated and structured on-the-job training to align with service standards and service procedures.Ensure bi-annual talent review is conducted utilizing the Ennismore performance review system, and ensuring the appropriate documentation is maintained to the required standard; correct performance issues and counsel as required.Participate in scheduled compliance training and development programs provided by Ennismore.Compliance and Reporting Keep up to date with changes in food safety and hygiene regulations.Prepare for and facilitate health department inspections.Maintain records of inspections, audits, and any incidents of non-compliance.Report any food safety issues to senior management and work on corrective actions.Qualifications Bachelor's degree in Food Science, Public Health, Environmental Health, or a related field is advantageous.Certification in food safety management systems (e.g., HACCP, Serv Safe) and previous experience managing a Food Safety Program.HACCP Certification is required.Food Safety Supervisor Certification.Minimum of 3-5 years of experience in food safety, hygiene, or Chief Stewarding, preferably in a restaurant or hospitality environment.Strong knowledge of local, state, and federal food safety regulations.Excellent communication and training skills.Strong organizational and multitasking abilities.Attention to detail and a proactive approach to problem-solving.Must have Full Australian Working Rights.Additional Information Mondrian Gold Coast is an equal opportunity employer.We endeavor to select, place, train, and promote the best qualified individuals based upon job-related factors such as ability, work quality, suitability, experience, and potential.#J-18808-Ljbffr
