Are you a passionate chef looking to take the next step in your culinary career? Byron Bay Services Club is seeking an experienced and creative Chef de Partie to join our dynamic team. With 16% revenue growth over the past 12 months, we are looking at finding the right person to complement our fantastic team.
What You'll Be Doing:
* Prepare and present high-quality dishes across various sections of the kitchen.
* Assist the Head Chef and Sous Chef in daily kitchen operations.
* Maintain hygiene and safety standards at all times.
* Ensure food is prepared to the highest standard and on time.
* Contribute ideas for menu development and special events.
* Coordinate daily tasks with the Sous Chef.
* Responsible for supervision of junior chefs or commis.
* Estimating the daily production needs and checking the quality of raw and cooked food products to ensure that standards are met.
* Ensuring that the production, preparation, and presentation of food are of the highest quality at all times.
* Ensuring highest levels of guest satisfaction, quality, operating and food costs on an ongoing basis.
* Implementing all standard procedures and policies pertaining to food preparation, receiving, storage, and sanitation.
* Be aware of all menu items, their recipes, methods of production, and presentation standards.
* Following good preservation standards for the proper handling of all food products at the right temperature.
* Operating and maintaining all department equipment and reporting any malfunctions.
* Ensuring effective communication between staff by maintaining a secure and friendly working environment.
* Establishing and maintaining effective inter-departmental working relationships.
* Taking personal responsibility for hygiene, safety, and correct use of equipment and utensils.
* Producing your own work in accordance with a deadline and to assist and encourage others in achieving this aim.
* Consulting daily with Sous Chef and Executive Chef on the daily requirements, functions, and any last-minute events.
* Guiding and training subordinates daily to ensure high motivation and an economical working environment.
What We're Looking For:
* Previous experience as a Chef de Partie (or similar role) in a fast-paced kitchen, ideally with a large Club/Pub style establishment.
* Strong understanding of various cooking techniques and styles.
* Ability to work well in a team and communicate effectively.
* Passionate about fresh, local ingredients and delivering exceptional dining experiences.
* Strong attention to detail and time management skills.
* A person who has stable local accommodation or is willing to establish the same prior to commencing employment.
* A person willing and able to commit to the venue for a minimum of 2 years.
