About the Role
Reporting to the Guest Experience Manager, the Food & Beverage Manager is responsible for all aspects of the culinary experience at Cruise Whitsundays. Based at Port of Airlie, the Food & Beverage Manager oversees daily café and catering operations across the business including at the onsite Cruise Café & Bar, onboard vessels and at Reefworld – a permanently moored pontoon, located 39 nautical miles offshore on the Great Barrier Reef. The Food & Beverage Manager also oversees catering operations for private charters and special events. The Food & Beverage Manager takes a hands-on role in ensuring café and catering operations run to budget without compromising on quality, range, safety, and the overall guest experience. They are passionate about all aspects of hospitality and are committed to continuous improvement across the business.
The Food & Beverage Manager is responsible for creating a strong, positive team environment, where standards are not simply met, but exceeded.
Key responsibilities include, but are not limited to;
1. Stay current on catering industry trends.
2. Identify customer needs and respond proactively to all of their concerns
3. Assist with menu creation
4. Develop SOPs and policies to improve operations, and ensure compliance within department
5. Build and maintain positive relationships with suppliers to ensure the business receives the best possible service and prices
6. Manage inventory and stock levels (managing substitutions where necessary in conjunction with chefs and supervisors)
7. Provide support to the Catering Chef and Café Supervisor and Operations Manager with regards to rostering and labour requirements for café, catering and Reefworld teams
8. Alongside the Catering Chef and Café Supervisor, hire, train and supervise café and catering staff to create a strong, engaged and high performing team.
9. Provide mentorship, leadership and guidance to Reefworld Chefs and contribute to performance discussions with Reef Experience Manager
10. Maintain and exceed standards of service and food standards, ensuring a 5-star guest experience
11. Budget development, adherence and business planning for continued improvement and growth
About You
To be successful in this role you will be passionate about all aspects of hospitality with a high level of attention to detail. With your experience in staff management you will foster a strong, positive team environment. You will be highly self-motivated with great energy and have the ability to multitask. A fast-paced and dynamic work environment excites you and have a proven track record of maintaining performance through this. As a leader with Cruise Whitsundays you will take pride in your ability to;
12. Rostering skills (with sound knowledge of the Hospitality Industry (General) Award)
13. Tech savvy with sound knowledge of POS and ordering systems
14. Commercially astute with knowledge of P&L, revenue and COGs
15. Generate strong growth in the Food & Beverage department
16. Ensure full, timely compliance with Australian Food Safety standards and WHS
17. Create a working environment with a strong operating rhythm to ensure efficiency and excellent food and beverage standards across the business
18. Ensure food and beverage operations are within budget without compromising on quality, range, and overall dining experience
19. Maintain an engaged, high performing and up to date workforce regarding all qualifications, learning plans and communication
Requirements
20. Minimum 5 years food and beverage management experience
21. Minimum of 2 years experience dedicated to elevating Net Promoter Score (NPS) and guest satisfaction through the enhancement of food & beverage offerings and services
22. Food Safety Supervisor (Level 1 - SITXFSA005 Use hygienic practices for food safety & Level 2 - SITXFSA006 Participate in safe food handling practices)
23. Cert III in Commercial Cookery (or similar) highly regarded
24. Responsible Management of Licensed Venues (RMLV).
25. Blue Card (Working with Childrens Check)
26. First Aid (HLTAID011) and CPR/O2 (HLTAID015)
